Strawberry Pie

For One Pie

  • 3 Pkgs (16 oz each) strawberries, trimmed – or- frozen strawberries
  • Graham Pie Crust -or- *pie crust of your choice
  • 3/4 c. sugar (or Splenda 3/4 c.)
  • 3 Tbs. cornstarch
  • 1 Pkg (3 oz) Strawberry-flavored jello (or sugar free)
  • 1 tsp. grated orange zest

Cut strawberries in half or if big slice in big chunks.

Over medium high heat whisk together 3/4 c. water, the sugar (or Splenda), and cornstarch; bring to boil, whisking constantly. Remove from heat; whisk in gelatin mix until dissolved. Stir in zest. Let cool awhile.

In large bowl stir together the halved strawberries and the strawberry-flavored gelatin mixture. Spoon into pie shell. Refrigerate until filling is set, about 4 hours.

Top with whipped cream to serve. Enjoy.
Variation: use 1/2 of 11 oz pie crust mix, or deep dish frozen pie crust, bake it and let it cool.
